Ένα ρωμαϊκό εργοστάσιο παρασκευής garum έφεραν στο φως οι αρχαιολόγοι 2 χλμ έξω από την αρχαία πόλη. Η παρασκευή του garum, μιας ιδιαίτερης σάλτσας που παρασκευάζονταν από τα εντόσθια ψαριών, ήταν διαδεδομένη στη ρωμαϊκή αυτοκρατορία, καθώς ήταν ένα εξαιρετικά αγαπητό άρτυμα των Ρωμαίων και των Βυζαντινών. Δεν έχουν βρεθεί, ωστόσο, αρκετά εργοστάσια παρασκευής του στο ανατολικό τμήμα της αυτοκρατορίας κι επομένως το εύρημα της Ασκαλώνος είναι ιδιαίτερα σημαντικό.
